Red Velvet Cake

What exactly is Red velvet cake? What does it taste like? Chocolate? Vanilla? Nobody really knows! Velvet cakes date back to at least 1873  the reaction of acidic vinegar and buttermilk tends to better reveal the red anthocyanin in the cocoa.  Bakers used boiled beets to enhance the color of their cakes.
